I had the interview, sent the first set of documents, and literally a week later I received a request for additional ones — is that considered an RFE? I figure if they requested something, the case is still alive and they’re doing something with it, not just letting it sit? Or should I be worried instead?
That’s an RFE (Request for Evidence) — if you send what they ask for, they’ll usually approve it without any problems.

When I answered the RFE, my approval came literally the next day — don’t panic.

In my case, an RFE (Request for Evidence) was issued a couple of weeks after the forms were received — that’s a completely normal situation. I sent what they asked for and it was approved with no questions. The main thing is to carefully read exactly what they’re requesting and don’t delay your response.
